Munagaku Vepudu (Drumstick Leaves Fry)
Ingredients
For Fry:
- 2 cups drumstick leaves cleaned and washed
- 1 tablespoon oil
- 1 teaspoon salt adjust to taste
- ½ teaspoon turmeric powder
For Tempering:
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 dry red chilies broken
- 8-10 curry leaves
- 1 medium onions finely chopped
Instructions
Prepare the Tempering:
- Heat 1 tablespoon oil in a pan. Add 1 teaspoon mustard seeds and let them crackle. Add 1 teaspoon cumin seeds, 2 dry red chilies, and 8-10 curry leaves. Sauté for 30 seconds.
Cook the Onion:
- Add 1 medium onions and sauté until soft and translucent.
Add Drumstick Leaves:
- Add 2 cups drumstick leaves, ½ teaspoon turmeric powder, and 1 teaspoon salt. Stir well and cook for 5-7 minutes until the leaves are tender.
Serve:
- Transfer to a serving dish and enjoy hot with steamed rice or roti.
