Ingredients
For Shrimp Marinade:
- 250 grams shrimp cleaned and deveined
- ½ teaspoon turmeric powder
- ½ teaspoon salt
For Curry:
- 2 tablespoon oil
- 1 teaspoon mustard seeds
- 2 dried red chilies
- 1 onion finely chopped
- 2 green chilies slit
- 1 teaspoon ginger-garlic paste
- 2 tomatoes pureed
- 2 cups gongura leaves chopped
- 1 teaspoon red chili powder
- ½ teaspoon coriander powder
Instructions
Marinate Shrimp:
- Marinate 250 grams shrimp with ½ teaspoon turmeric powder and ½ teaspoon salt. Set aside for 10 minutes.
Prepare the Curry:
- Heat 2 tablespoon oil in a pan. Add 1 teaspoon mustard seeds, 2 dried red chilies, and sauté. Add 1 onion and sauté until golden.
- Add 2 green chilies and 1 teaspoon ginger-garlic paste. Cook for 2 minutes.
- Stir in 2 tomatoes and 2 cups gongura leaves. Cook until the leaves soften.
- Season with 1 teaspoon red chili powder and ½ teaspoon coriander powder. Add marinated shrimp and simmer for 8-10 minutes.
Serve:
- Garnish with fresh coriander and serve hot with steamed rice.
