Menthiaaku Vepudu (Fenugreek Leaves Stir-Fry)
A flavorful and healthy South Indian stir-fry made with fresh fenugreek leaves, tempered with spices, and perfect as a side dish for rice or roti.
Ingredients
For Stir-Fry:
- 2 cups fenugreek leaves cleaned and chopped
- 1 medium onions finely chopped
- ½ teaspoon turmeric powder
- 1 teaspoon salt adjust to taste
For Tempering Spices
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 dry red chilies broken
Instructions
Prepare the Tempering:
- Heat 1 tablespoon oil in a pan. Add 1 teaspoon mustard seeds and let them crackle. Add 1 teaspoon cumin seeds and 2 dry red chilies. Sauté for 30 seconds.
Cook the Onion:
- Add 1 medium onions and sauté until translucent.
Add Fenugreek Leaves:
- Add 2 cups fenugreek leaves, ½ teaspoon turmeric powder, and 1 teaspoon salt. Stir well and cook for 7-8 minutes until the leaves are tender.
Serve:
- Transfer to a serving dish and enjoy with steamed rice or roti.
