Peanut Chutney
A creamy and nutty chutney made with roasted peanuts, green chilies, and tamarind, perfect for pairing with idli, dosa, or upma.
Ingredients
For Chutney:
- 1 cup roasted peanuts
- 2 green chilies adjust to taste
- 1 teaspoon tamarind paste
- ½ teaspoon salt adjust to taste
- ½ cup water adjust for desired consistency
For Tempering:
- 1 teaspoon oil
- ½ teaspoon mustard seeds
- ½ teaspoon urad dal
- 1 dry red chilies
- 5-6 curry leaves
Instructions
Blend the Chutney:
- Combine 1 cup roasted peanuts, 2 green chilies, 1 teaspoon tamarind paste, ½ teaspoon salt, and ½ cup water in a blender.
- Blend until smooth, adding more water as needed for desired consistency. Transfer to a serving bowl.
Prepare the Tempering:
- Heat 1 teaspoon oil in a small pan. Add ½ teaspoon mustard seeds and let them crackle. Add ½ teaspoon urad dal, 1 dry red chilies, and 5-6 curry leaves. Sauté for 15 seconds.
Combine and Serve:
- Pour the prepared tempering over the chutney. Serve with idli, dosa, or upma.
