Stir Fry Green Beans with Coconut (Beans Thoran/Beans Poriyal)
Ingredients
For Stir-Fry:
- 3 cups green beans chopped
- ½ cup fresh grated coconut desiccated coconut or frozen grated coconut
- 2 green chilies slit lengthwise
- ½ teaspoon turmeric powder
- 1 teaspoon salt adjust to taste
For Tempering Spices:
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 8-10 curry leaves
- 2 dried red chilies broken
Instructions
Prepare the Tempering:
- Heat 1 tablespoon oil in a pan. Add 1 teaspoon mustard seeds and let them crackle. Add 8-10 curry leaves and 2 dried red chilies. Saute for 30 seconds.
Cook the Beans and Coconut:
- Add 3 cups green beans, ½ teaspoon turmeric powder, and 1 teaspoon salt. Stir and cook for 5-10 minutes until tender. Add ½ cup fresh grated coconut and 2 green chilies. Mix well and cook for another 3 minutes.
Serve:
- Transfer to a serving dish and enjoy as a side dish with rice or chapati.
