Ingredients
  

For Egg Bhurji:

  • ¼ cup onion finely chopped
  • 1 green chili chopped
  • ½ teaspoon salt adjust to taste
  • 2 eggs whisked
  • 1 tablespoon cilantro chopped (optional)

For Tempering

  • 1 teaspoon oil or ghee
  • ¼ teaspoon mustard seeds
  • ½ teaspoon urad dal
  • ½ teaspoon cumin seeds
  • ½ teaspoon chana dal

Instructions
 

Cook the Base:

  • Heati 1 teaspoon oil or ghee in a pan. Add ¼ teaspoon mustard seeds, ½ teaspoon urad dal, ½ teaspoon cumin seeds, and ½ teaspoon chana dal
    Whole spices tempering in hot oil in a frying pan
  • Add 1 green chili, ¼ cup onion, and ½ teaspoon salt. Sauté until soft.

Spice & Scramble:

  • Pour in 2 eggs and cook on medium, stirring until soft and scrambled.
    Two raw eggs added to the pan for scrambling

Finish & Serve:

  • Turn off heat and stir in 1 tablespoon cilantro. Serve hot with toast or paratha.
